About this role
Central Market is a specialty grocery that started in Austin, Texas in 1994 and has grown to multiple locations across the state. It offers a sumptuous selection of everything edible, going straight to the source for the finest food and drink. With hundreds of cheeses, thousands of wines, acres of produce, and aisles of experts, it is a foodie’s wonderland.
The Sous Chef oversees daily responsibilities for line cooks, prep cooks, Artisan Bread Makers, Cake Decorators, Pastry Specialists, and Bakery Partners. This role ensures production of necessary products for the Chefs Case, Soup/Salad/Sandwich Bar, Catering, Bakery, Tortilleria, Bread Production, and Pastry areas. Assist in scheduling Partners within budgetary guidelines while maintaining clean and sanitary work areas.
Spend majority of time using independent judgment in employment-related decisions, including product strategies, hiring, promoting, and disciplining. Manage total kitchen production in absence of the Executive Chef or Executive Sous Chef. Work in a market that unites families, preserves cultures, and starts new traditions through food exchange.
Assist in new product development and menu costing to support business needs. Troubleshoot equipment malfunctions and uphold sanitation standards. Duties may be modified based on business needs, with opportunities to resolve Partner-related matters effectively.
Requirements
- Ability to execute high volume production
- Experience in ordering, inventory maintenance, and shrink control
- Proficiency with automated reporting systems including Inventory, Food Cost, Scheduling, Time & Attendance, and labor
- Ability to supervise, train, and cross-train kitchen staff
- Ability to work a flexible schedule including opening, closing, and weekend shifts
- Excellent customer service skills
- Excellent communication and organization skills
- Excellent culinary and food processing skills
