The Baker Lead works directly with the Production Manager to ensure accurate quantities of high quality product are produced efficiently while adhering to FSMA guidelines. This role manages daily shift operations and stays actively engaged in all aspects of Bread Production. It requires attention to detail and a desire to continually improve production baker skills.

Lead a crew cooperatively in a production team environment as the third of three Baker Levels. Train new crew members, coach team members on the floor, and provide feedback in the moment as PIC. Work with the Production Manager to train bakers effectively and safely across all bakery areas.

Set and maintain pace to ensure smooth transitions and maximize efficiency. Make daily production decisions and planning. Demonstrate adeptness across equipment stations like forming, couching, hand scaling, hydraulic divider, Bertuetti Bread Line, and rack ovens.

Responsibilities

  • Work with Production Manager to ensure accurate quantities of high quality product produced efficiently adhering to FSMA guidelines
  • Manage daily shift operations and engage in all aspects of Bread Production
  • Coach, mentor, and train bakers during the shift
  • Train new crew members and provide feedback on the floor as PIC
  • Make daily production decisions and planning
  • Set and maintain pace for smooth transitions and maximum efficiency
  • Operate equipment stations including forming, couching, hand scaling, hydraulic divider, Bertuetti Bread Line, dough molders, rack oven, hearth oven, spiral mixer
